Cinnamon Extract

This richly aromatic Cinnamon Extract is made with a rare heirloom Vietnamese cinnamon harvested near Huế, the former imperial capital. The sun-dried bark carries caramellic notes of honey and orange peel.

We extract the cinnamon into a blend of neutral spirit and rye whiskey, which deepens its spicy-sweet character. Use it in old fashioneds, daiquiris and coffee to add warmth and body, or add it to syrups for clean, evenly dispersed flavor.

Like our bitters, this extract is potent. Even a few drops goes a long way. But where bitters layer a dozen or more botanicals, the extract delivers one flavor at full strength. Sometimes that single note adds more to a cocktail than a complex blend can.
